Some notes regarding twink professions for the 19 bracket.
First Aid and Cooking can be leveled to 225 for level 19 toons. By contrast, fishing, and the various primary professions can only be leveled up to 150. Gnomes engineers are an exception because they have a racial passive which adds a +15 boost to engineering.
First Aid (225) - Level 19 characters can level first aid skill to 225. This allows them to make bandages up to mageweave bandages, but at this skill level use one can use up to heavy runecloth bandages, the later heals 2000 dmg over 8 seconds! This is 250 health per second! The strongest healing potion available at this level only restores 280-300 health, so even if you can only get two seconds of healing you've restored more live than drinking a potion. Also bandages and potions have separate cool down timers. For Expert First Aid (125-225) you'll need to buy a book for 1 gold from Deneb Walker in Stromgarde Keep, Arathi Highlands. Deneb also sells the manuals that teach Heavy Silk Bandage and Mageweave Bandage (22 and 50 silver respectively).
Engineering (150) - most twinks are engineers because with a few notable exceptions (lucky fishing hat, and bloodsail admirals hat), the green tinted goggles are the best avail. headgear for most classes at this level. You can also make/use the following items: big bronze bomb, explosive sheep, aquadynamic fish attractor, minor recombobulator, discombobulator ray, and target dummies (which work against pvp pets only).
Blacksmithing (150) – is another useful, and apparently overlooked, profession for twinks. Many character classes can take advantage either the heavy sharpening stone or the Heavy Weightstone to add damage to melee weapons. These are particularly practical twink buffs because they persist through death! Thick Bronze Darts are also favored by some rogues for the stat bonus. Although more crafty rogues will obtain Throat Piercers. Unlike Engineering items, which generally require engineering to use, all of these items can used by non-blacksmiths so a reasonable alternative would be to purchase these items or make them with an alt.
Engineering, and blacksmithing require stone and metal to to skill up and restock consumables. These items are easily farmed and the tend to be overpriced (imo) at the AH. So if you don't have a mining alt or friend you should consider taking mining as your toon's second primary profession.
Fishing (225) - Many twinks take the time to max their fishing. This can easily be done in the canals of SW between BGs. At 150 toons can fish in STV for a chance at some of the BB fishing contest prizes (highly sought by twinks).
Edit Aug. '08 - The book to take fishing to 225 can now be learned by level 19s. This should make fishing in the contest a little easier if not less boring.
Cooking (225) - Like first aid, cooking can be learned up to skill 225. Cooking does not play a particularly important role for a twink since food with +4 or +6 stamina buff will cancel out the +15 stamina buff provided Rumsey Rum Black Label (the rum also gets you buzzed, which after hours of grinding in WSG is much appreciated). So I've included cooking here mostly since I like to cook and eat a Savory Deviate Delight at the start of WSG before the gates open (they taste better hot). Also if you're gonna spent so much time maxing all the other twink stats, why not hit cooking too. The Expert cookbook can be purchased for 1 gold from Shandrina at the Silverwind Refuge covered pavilion in Ashenvale.
Thistle Tea is an interesting cooking item for Rogues as it restores rogue's energy. The recipe is a rogue-only quest reward / vendor item from Ravenholdt Manor in Hillsbrad (vendor version avail only once quest is completed). However, the level requirement to begin the quest is 24 and the recipe is now BoP, so you would have to have rogue toon make these for your 19 twink. A friend of mine had the recipe banked from before Blizzard made it BoP and sent it too me, but that was extremely lucky.
